National Donut Day, Oatmeal, and morning runs

So yesterday was National Donut Day!  I read that Krispy Kreme's give out free donuts on this wonderful holiday. *drool*


But since we're about a billion miles from any KK, we made our own!  Super good, but super sugary so instead of having one of the leftovers for breakfast this morning I made overnight oats.

Ingredients:
  • 2 tablespoons chia seeds (don't have them)
  • 1/3 cup oatmeal
  • 3/4 cup almond milk (regular milk)
  • Banana (all ours were brown and attracting gnats)
  • Five heavy pinches of sugar (didn't actually use it)
  • Salted peanuts (used PB instead)
Directions:
  • In a small bowl, combine chia seeds, oatmeal, and milk.  Put in fridge and let stand overnight.
  • In the morning, remove chia seed mixture and stir.
  • On a hot and greased griddle, place banana chunks and cook on high until it begins to brown.  Flip once and sprinkle with sugar.
  • Mash half of the grilled banana and plate. 
  • Top with remaining banana and nuts.
  • Enjoy!

This looks like a really yummy oatmeal recipe, but as you see in the ingredient section above I ended up having it majorly different.  I tossed the oats and milk in a bowl and let it sit overnight, then pulled it out the next morning, added a teaspoon or two of the ol' PB, and called it good!  


Jake and I got up early this morning to go on our run.  We're attempting to start following the half training schedule again.  Our plan is to be really relaxed about it, repeating a week if we need to.  I just really like having a schedule to build my mileage, and know what days I'm going to do what.


It was a beautiful morning, not hot yet...but even after stretching and warming up my legs felt like they were saying, "Um, we're not awake yet...we're tired...what are you doing?"  Hopefully they'll get used to morning runs once time goes on.


Got back from the run, cleaned up, and then gobbled my oatmeal before we went down the road for our Saturday morning Bible class!


I added just a little too much milk...that weird thing that looks like it's hanging from my nose is actually a drop of milk. I promise.

Also, I used part of my itunes GC to buy Despicable Me.

I better just stop before the rest of this turns into a "my favorite quotes from this movie" post.

Happy Day that celebrates Mothers!

Happy Mother's day to all of you out there!  I'm especially excited for Erin because it's the first year that she's celebrating as a mother!  Is there anyone else out there that is a first time Mother's Day mom?

I spent yesterday afternoon cooking stuff ahead for breakfast this morning.  Good thing, because I didn't have too much to do this morning, which is a huge plus, because I hate being rushed while getting ready for church.

On the menu was:
Quiche 
Blueberry crepes topped with cream, strawberries and powdered sugar
Hashbrowns
Fruit salad
Fresh squeezed orange juice

We have an orange tree in our backyard (along with two mango trees - they're out of season, though), and it's my favorite thing!  I love making fresh juice.


 Jacob went out and picked some flowers for a centerpiece.  Our neighbor might have been a liiitle puzzled as to why a guy was out there with a huge handful of flowers...
  

I thought that crepes were going to be difficult to make, but they're actually super easy and fast!
  


Carey (there's another family that works here with us, and Carey's the dad of my adopted niece and nephews that I told you about) preached in Swahili today, and did an amazing job!  He's almost completely fluent.

After coming back to the house and relaxing for a while, Dad, Jacob, Luke and I went on a bike\run.  I ran for the first 1.5 miles, but then Dad wanted to run a bit, so I took over the bike, and rode it back.  Jacob and I took the dogs out for a short walk too.

I finally did day 3 of my push-up challenge today; these are my sets:
8x1; 10x1; 7x2, 20x1

I can already tell a big difference in my strength.  How convenient that it's three days a week, and only takes a few minutes, too!

We're no longer invalids

It's almost Easter! It's such a shame that we don't have our plastic Easter eggs so we could have an egg hunt with the kids.  {My adopted niece and nephews, Aubrie, Ayden, and Ryan.  As far as they're concerned, I'm their true aunt - it's the best!}

 Here's an old picture [I think about a year and a half, or so] of me with Aubrie and Ryan.  Aren't they cuties?!  I'll have to get some new pictures of them to put up.  I love hearing, "Aunt Liiinz!..." every two seconds!


Anyway, we might do some fun Easter-y crafts or something!  I'll see if I come up with anything.
I ate one of these yesterday - yum! I have one square left that I'm hoarding away, and will probably eat in about...13 minutes.  So good.  Cadbury is the best; I think I like it better than Hershey's.  Speaking of candy, I've been craving gummy bears like crazy.  It's pretty pathetic.  I blame it on seeing a bunch of them in peoples' fro-yo.


The Boys [Jacob + Luke = "The Boys"] and I went on a walk this evening, it was so exciting!  It was the first time we've been able to get out and do much of anything.  I even swept the house and did some of my normal stuff again today, woot! 

I made supper tonight that consisted of: corn on the cob, greens, sweet potatoes, carrots, pork, and garlic bread.  It was really good!  I'm looking forward to getting back into eating better now that my stomach doesn't complain at anything besides bread.  I definitely feel it when I don't eat well!
